Valentine’s Day Special: Raspberry and Lemon Cheesecake

We have the perfect Valentine’s day recipe for you! Whether you make it for someone special or you make it together it will be incredibly delicious:

The Ingredients

• 100g Porridge Oats
• 100g Macadamia Nuts
• A squeeze of Honey
• 250g Mascarpone Cheese
• 100g Caster Sugar
• 1 Lemon
• 300g Fresh Raspberries
• 50g Icing Sugar
• 50ml Water
You will need
• Food Processor
• Electric Whisk
• Disposable Piping Bag

The Method

The Base:
Pre-heat the oven to 180C. Spread the porridge oats on the baking tray and squeeze over some honey to coat the oats. Place in the oven for 15 – 20 minutes until they are golden and crunchy.
Place the macadamia nuts in a food processor and blitz into small pieces. Next, put the nuts in a frying pan on the hob and toast until they are golden brown, stay close because this will only take minutes!
Mix the toasted oats and nuts together and put to one side.
The Mix:
Whisk the mascarpone and caster sugar together in a mixing bowl
Add the zest and juice of 1 lemon and keep whisking until you have a lovely and smooth creamy mixture. Add more sugar or lemon juice if needed.
Put the mixture into a piping bag and place in the fridge until you are ready to plate up.
The Sauce:
Put 6-8 raspberries to one side to use to decorate.
Put the remainder of the raspberries into a small pan with the icing sugar and the water and heat over a medium heat for around 10 minutes.
Strain the mixture so you are left with a smooth seedless sauce.
Put the sauce into a piping bag and place in the fridge until it is time to plate up.
Save some sauce for a special Valentine’s day drink!
